since dinosaurs don't need to fit, gauge isn't terribly important. the fabric should be tight enough that the stuffing isn't visible from the outside. use a needle a two or three sizes smaller than the yarn recommends.

Arms
Make two. (Or rather: I made two, but your t-rex can have as many or as few arms as they'd like.) These are easy. If you want more pronounced claws, try four rows of stockinette instead of two. CO 7 sts, leaving a 3-4" tail. Row 1: k2, turn. Row 2: p2, turn. Bind off all sts, leaving a 3-4" tail Legs You'll probably want two. They're knit flat, and then seamed. CO 4 sts Rows 1-6: k all sts. Row 7: CO 10 sts, k all sts. Row 8 and all even rows: p all sts. Row 9 and all odd rows: k all sts. Row 20: p all sts. Bind off, and leave a 12" tail.
Finishing
First, use the tails of the arms to attach them in what looks like good arm spots on the body. Basically, just use the tapestry needle to thread each end through, and reaching inside the body, tie a nice knot. Then, stuff the tail and body up to the neck. )u're using buttons for eyes, now would be a good time to attach them. Use the tapestry needle and the yarn from the cast-on for the head, sew the head seams, which are Y-shaped. Stuff the head, poking stuffing in through the neck. Then sew the neck closed. Tie a small knot and poke the loose ends inside the beast. Finally, use the leg ends to sew around the bottom of each foot and the side seam of each leg. Stuff them and attach them to the body in a logical location. The legs and tail together should form a tripod-like support. Attach googly eyes to the head with craft glue, once again using your logical placement skills. Or glue them to your buttons if you desire obnoxious eyes. That could look pretty cool. Poke any other loose ends inside the dinosaur. Introduce your new buddy to all your friends. They will be amazed and ask you if you'll make them one. Smile, and shake your head. Tell them to knit their own damn dinosaurs. This one's yours.
