The numbers can be cut and then pasted into the pattern. You also find instruction to chart the numbers in such a way that they appear unmirrored on the reverse side in Double Knitting.

If you want the chinese sign to appear unmirrored on the reverse side, please use pattern on page 4. This Chinese Sign is one of the 214 traditional Chinese radicals. It is used for cow, ox, beef and buffalo. It represents a stylized water buffalo with two horns, however only one horn is still visible in Modern Chinese Script. The Chinese Seal Script is a very old script. It had its peak in the Qin-Dynasty (221 bc -207 bc) . It can be found on old stones and potery. Today the Seal Script is only used in Seals and in the art. Seals are always red in China, therefore I think red is a good color for the yarn. But you may of course use any yarn you like.
