The face can be knitted using intarsia in the round, there is an excellent and short how-to video on youtube by Planet Purl at http://www.youtube.com/watch?v=ofSotC-vPSw To create the head with intarsia in the round, when you begin the color work, wrap and turn at the end of each knit row, then turn the piece to work backwards, purling as if making a flat work on straight needles, and at the end of the purl row, pick up the wrap and purl it together with the wrapped stitch.
